Sake Tasting Discovery at Hidden Breweries in Old Town
Overview
Overview
Sake is often enjoyed simply as a drink. In Japan, it is something much deeper.
It tells the story of a place—its water, its winters, its people, and generations of dedication to perfecting a single craft.
On this private experience, you'll step inside a historic brewery rarely open to visitors, discover how sake is made, and explore Takayama's old town through the people who have shaped it for centuries.
By the end of the tour, you won't just know more about sake. You'll understand why it became one of the foundations of Japanese culture.

Hisa
For fifteen generations, this brewery has been cared for by the same family. Your guide, Hisa, has her own lifelong connection to sake. Her mother's family operated a local brewery, so sake was never just a drink, but part of everyday conversations, seasonal rhythms, and family life. Today, she shares not only how sake is brewed, but why it became such an important part of Takayama's identity. She believes every brewery has its own personality, and every guest discovers something different.

Place
Gifu's oldest sake brewery
Sanmachi Suji, Takayama, Gifu
Your journey begins in the oldest sake brewery in Gifu Prefecture, a brewery with more than 400 years of history. It draws its water from the Japanese Alps, using some of the softest water in the country, giving Hida sake its clean, delicate character and allowing subtle flavors to shine without harshness. While many breweries have modernised, this one continues to preserve traditional techniques, including the time-honoured Yamahai method. Here, sake isn't simply produced. It is patiently crafted, one winter at a time.
